What Alcohol Is Rum?

Rum is one of the oldest and most diverse spirits in the world, with a history that stretches back to the sugar plantations of the 17th-century Caribbean. Made from sugarcane byproducts, primarily molasses, or directly from fresh sugarcane juice, rum encompasses an astonishing range of styles, from crystal-clear white rums perfect for cocktails to deeply aged dark rums that rival the complexity of fine cognac. How Rum Is Made

The production of rum begins with sugarcane. Most rums are made from molasses, the thick, dark syrup left over after sugar crystals are extracted from sugarcane juice. The molasses is diluted with water, yeast is added, and the mixture ferments for anywhere from 24 hours to several weeks depending on the producer. The fermented liquid is then distilled, either in pot stills for a fuller flavor or column stills for a lighter character. After distillation, the rum may be aged in oak barrels, blended, filtered, or flavored before bottling.

  • White or Silver Rum - Aged briefly or filtered to remove color, light and clean for cocktails like Mojitos and Daiquiris
  • Gold or Amber Rum - Aged in barrels for a year or more, gaining color and medium body
  • Dark Rum - Extended barrel aging creates rich, complex flavors of caramel, molasses, and spice
  • Spiced Rum - Infused with spices like vanilla, cinnamon, and clove for a distinctly flavored spirit
  • Overproof Rum - Bottled at higher than standard alcohol content, typically 50-75% ABV
  • Rhum Agricole - Made from fresh sugarcane juice rather than molasses, primarily in French Caribbean islands
  • Navy Rum - A traditional blend style associated with the British Royal Navy's daily rum ration

Rum Around the World

Different regions produce distinctly different rum styles. Jamaica is known for funky, full-bodied pot still rums with intense flavor. Barbados produces elegant, balanced rums that showcase the spirit's versatility. Cuba and Puerto Rico favor lighter column-still rums ideal for cocktails. Guyana's Demerara rums are rich and intense, while Martinique and Guadeloupe specialize in rhum agricole with grassy, floral character. Each origin brings unique traditions and terroir to the glass.

Best Ways to Enjoy Rum

White rum is best enjoyed in cocktails like the Mojito, Daiquiri, and Pina Colada where its clean sweetness shines. Aged rums of eight years or more deserve to be sipped neat or with a single ice cube to appreciate their complexity. Dark rum is excellent in tropical cocktails and tiki drinks, as well as in cooking and baking. Spiced rum works well with cola, ginger beer, or in warming winter cocktails.
