Nowadays, Soju is made from Rice, Barley, Sweet potatoes, Wheat or tapioca. The ingredients are fermented and then distilled to get the spirit which is further diluted with water. Sweeteners are added to give it a flavour and make it a proper alcoholic beverage.

On the other hand, Sake is made using polished rice. First, the outer layer of rice is removed and then the starch is converted into sugar. This process is called brewed saccharification. Then fermentation is done which results in a very complex and flavourful beverage. It is both sweet and acidic in taste.

Difference in Alcohol content

Soju and Sake are also different in terms of alcohol content. Though it is not very vast, Soju is comparatively high in alcohol. The alcohol content of a drink must range between 5 to 50%. In Soju it is typically 16% to 25%. So Soju is a light drink which can be mixed into cocktails. Some Sojus are even at 12% alcohol content. This is still more than Sake.

Sake has comparatively lower alcohol content than Soju. In Sake, it is from 15% to 20%. As Sake is also stronger, it is consumed in small cups. The best flavours of Sake are appreciated when you drink it sip by sip.

Difference In Terms of Flavours

Soju has mild flavours. It is usually served neat. The sweet and clean taste doesn’t overpower the palette so it is also a very good addition for cocktails. Soju complements Korean cuisines especially spicy Korean dishes.

Sake has a more complex flavour profile. This is because of the difference in the making process. Brewing brings out the complex flavours in the drink. However, depending on the brewing method, the taste can be sweet or dry. The drink also has subtle notes of fruit, flowers and umami. Sake is a very balanced drink that pairs well with Japanese cuisines like sushi or sashimi.

Soju is served neat and in small shot glasses but the drink is usually balanced with water and sweetener. So one may drink in more quantity without realizing the actual amount of alcohol intake. Sake is also available in different varieties. This depends on the polishing ratio of rice. One of the varieties includes pure rice with no added alcohol. It is called Junmai and offers a rich and full-bodied flavour.
